For the coffee cake:

  • 1 1/3 c. white whole wheat flour*
  • 1/3 c. granulated sugar
  • 3 T. brown sugar
  • 1 t. baking powder (3/4 t. for high altitude)
  • 1/4 t. baking soda (slightly less for high altitude)
  • 1/4 t. salt
  • 3 bananas
  • 2 t. vinegar mixed with:
  • 1/2 c. milk, any kind (+ 1/2 T. for high altitude)
  • 1 T. applesauce
  • 1 T. orange juice
  • 1/3 c. canola oil

For the streusel:

  • 1/2 c. white whole wheat flour
  • 1/2 c. brown sugar
  • 2 t. cinnamon
  • 1/4 c. melted butter
  • 1/2 c. walnuts, chopped (optional)

Directions: 

Preheat oven to 350 degrees.  Lightly grease an 8 X 8" pan.

In a large bowl mash the bananas (a potato masher works well for this task); mix in the vinegar-milk mixture, applesauce, o.j., oil, egg, and vanilla.  Stir in both sugars, baking soda and powder, and salt.  Add white whole wheat flour and stir just until combined.  Set aside.

For the streusel, combine dry ingredients, sans walnuts, in a small bowl.  Add melted butter and mix until crumbled. Set aside.

Spread half of the coffee cake batter evenly into the prepared pan.  Sprinkle with half the streusel mixture.  Pour the remaining batter evenly over the streusel.  Top with remaining streusel and optional walnuts.

Bake for 30 - 35 minutes, or until toothpick inserted in center comes out with little to no crumbs attached.
