You don't need to throw away those snubbed bread heels. Why? Because they can be transformed into toasted, crunchy, golden bread crumbs that pair oh so well with such delights as macaroni and cheese, tuna casserole, and meatloaf (just to name a few). Don't have time to make a batch at the moment? Just place unused bread heels in a Zip-Loc bag, store in the freezer, and make the bread crumbs when you're good and ready.
Put bread slices in a food processor*. Pulse until you've reached smallish crumbs - a few bigger crumbs are just fine.
Place a large skillet over medium heat and drizzle in about 1 - 2 Tablespoons olive oil. When heated, add crumbs, salt, pepper, and desired amount (about 1/2 - 1 teaspoon) of optional seasonings and stir. Toast the crumbs, tossing frequently, until crunchy and golden brown, about 5 minutes.
Pour on to a paper towel-lined plate and let cool. These can be stored in a Zip-Loc bag in the freezer.
