Here's a cake everyone loves and no one forgets. If you want to leave an impression and not be in the kitchen all day, this is the cake for you.
Preheat oven to 350 degrees. Whisk together flour, salt, sugars, and baking soda in a large bowl, making sure to get out any lumps (feel free to use your fingers to help). Stir in marshmallows and set aside.
In a small saucepan combine butter, cocoa powder, and Coca Cola. Place on stove over medium heat and bring to a boil. Remove from heat and pour over flour-sugar mixture. Add vinegar-milk mixture, eggs, and vanilla. Mix by hand, not by mixer, to make a thin batter.
Pour into a 9 X 13”(ish) greased rectangular baking dish and bake for 30 – 35 minutes, or until toothpick inserted in center comes out sans wet batter and only a few/no crumbs attached. The baked cake will have marshmallows clustered toward the center and may even sink a bit– don't worry, you'll be drenching it with delicious frosting and it will taste so good no one will care!
About 10 minutes before cake has finished baking, make the icing. Pour powdered sugar in a medium bowl and set aside. In a small saucepan combine butter, cocoa powder, salt, and Coca Cola. Place on stove over medium heat, stir, and bring to a boil. Remove from heat, pour over powdered sugar and stir to combine. Add pecans and vanilla; give another gentle stir, then pour on warm cake. Let cool and serve.
