Heat oven to 350 degrees. Using a hand or stand mixer*, cream together the butter, sugars, vanilla, and eggs. Mix in flour, baking soda, and salt until thoroughly combined. If mixture looks dry or crumbly, add milk or water, 1 tablespoon at a time, until the dough holds together. Stir in chocolate chips.
Bake 10 - 13 minutes, or until light brown. Remove from oven and cool 2 minutes before removing to a wire rack*. At this point, you may eat a super hot cookie, or try to wait and let the cookies cool before sampling. YOU WILL NOT BE DISAPPOINTED!! These are excellent cookies that are nice and soft and get rave reviews - every single time!
Store these in an airtight container or bag for several days at room temp, or much longer in the freezer. They will taste wonderful either way. You may also make these up to the dough point, drop by tablespoonful onto a parchment covered cookie sheet, stick in the freezer for 15 minutes, then transfer the resulting frozen dough balls to a resealable plastic bag. Place the bag into the freezer, and when you desire, bake as many or as few cookies as you'd like. Same temp, about a minute longer to bake.
Makes about 3 1/2 dozen top notch cookies.
