Here's a classic, but even better since it's not made with a cake mix.  Homemade, easy, and delicious?  It can be done!

Fluffy Frosting and Decoration:

  • 3 1/2 oz. instant vanilla pudding
  • 8 oz. Cool Whip
  • 1 c. milk, any kind (3/4 c. if using almond, soy, or rice milk)
  • Strawberries
  • Blueberries

Preheat oven to 350 with rack in the center. Spray a large cake pan (a 10X14" lasagna-roasting pan actually works well for this, but a 9X13 pan will also do) with nonstick spray. Combine milk and water in 4 cup glass measuring cup* and heat about a minute, or until hot.  Set aside.  Whisk together flour, sugars, baking soda, and salt in a large bowl.

To the hot milk and water, add and combine the melted butter, oil, vinegar, and vanilla. Pour over the dry ingredients and whisk just until combined – a few lumps are fine. Pour batter into pan.  Bake 30 – 40 minutes, or until a wooden toothpick inserted in the center comes out with a few moist crumbs attached, but no batter.

When the cake is almost done, mix the strawberry gelatin, boiling water, and soda together. As soon as the cake comes out of the oven, poke holes all over the darn thing, using a toothpick, a skewer, a fork, or some other such object that will make smallish holes.  Immediately pour the soda mixture over the hole studded cake to let the strawberry goodness seep in.

Let cool completely, then prepare Fluffy Frosting by gently mixing dry pudding mix and milk together until thick.  Blend in Cool Whip until well mixed.  Spread over cooled cake and make a flag using sliced strawberries and blueberries.

Refrigerate or enjoy right away and congratulate yourself on making a cake from scratch!

P.S. There are no eggs in this cake, yet you can't even tell - no kiddin'!
